#BrosiaEATS: LUNCH

I'm doing my best to always make getter decisions on meal choices,  avoiding the drive-thru lines and keeping far away from the microwave.  I moved during the first week of the year and my new house didn't come equipped with a microwave, so I'm going with it.  I'm all about the stove, oven and cold meals at this point!

For lunch today I had Swai, seasoned with lemon, pepper and topped off with parsley flakes.  Along side of the fish I had quinoa-- I really enjoy the mixed quinoa packages available at Target, I've mentioned them in the past and have round this particular mix to be my favorite-- it includes spinach, tomatoes and delicious feta cheese. So yummy!  I washed it all down with a refreshing cup of sweet tea.

VEGAN DISH

So here I am, testing the waters at eliminating meat from my diet. Yesterday was my first full "No Meat" day, todays lunch was this mixture of quinoa, spinach, garbanzo beans, red peppers, mushrooms, broccoli and firm tofu. Target carries this amazing mix package that included the quinoa, spinach, garbanzo beans and red peppers which can be either microwaved in the package or cooked on the stove top.  I sautéed the mushrooms and seared the tofu, then later threw in the broccoli.  I like my broccoli firm but if you like it softer you can cook the broccoli with the mushrooms.   This was a simple and filling meal, perfect ingredients for meal prepping.

Let me know what some of your favorite vegan meals are and if you have links to recipes, that would be even better!

CREPE BAR

This morning Rob and I grabbed breakfast at Crepe Bar in Tempe, it was the first visit for both of us and we were 100% pleased.  The initial arrival was welcoming, it really gave off that downtown vibe which I really love.  The small menu made it easy to make a selection, we both had a breakfast burro crepe.  I had a Vanilla latte, he enjoyed a caramel latte that he added even more sweetener to LOL thats my Rob!  We snacked on some complimentary granola while we waited on our meal, it came out within about 10 minutes, it was amazing! I am big on presentation, the bacon added the perfect touch without feeling heavy. After we'd finished eating our main dish we had a complimentary dessert, I'm not certain what type of cookie it was-- it was delicious nonetheless, everything was RICH.  If you happen to be in the Tempe, AZ. area stop by 7520 S. Rural Road, Tempe, AZ. [Elliott & Rural Rd.]
